Kedgeree cooking recipe mothed:


Ingredients: 



- 2 tablespoons of butter



- 1 medium onion, finely chopped



- 2 cups cooked, flaked fish



- 1 teaspoon curry powder



- 1/4 teaspoon ground cumin



- 1/4 teaspoon ground ginger



- 2 hard-boiled eggs, chopped



- 1/4 cup currants or raisins



- 2 cups cooked basmati rice



- 1/4 cup chopped fresh parsley



- Salt and pepper to taste


Kedgeree cooking recipe



Instructions: 



1. In a large skillet, melt the butter over medium heat. 



2. Add the onion and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.



3. Add the fish, curry powder, cumin, and ginger, and cook, stirring, until the spices are fragrant and the fish is heated through, about 2 minutes.



4. Add the eggs, currants or raisins, and cooked rice, and cook, stirring, for about 2 minutes more. 



5. Remove the skillet from the heat and stir in the parsley. 



6. Season to taste with salt and pepper. 



7. Serve the kedgeree hot.
